A salad is one of my go-to dinner sides. Really with any of these recipes, if you don’t feel like it is enough food, add a salad (just make sure you are measuring out the dressing so you don’t go overboard). This is my family’s dressing recipe, with the addition of hot sauce and balsamic vinegar as my own twist on it. I always make a big batch and keep it at room temperature on the counter so throwing together a salad for lunch or dinner is super simple and fast. Enjoy!

 

Superfood Salad

Serves 4

~4-6 cups mixed greens with kale
¼ c. raw almonds, coarsely chopped
¼ c. dried cherries, coarsely chopped

Dressing Ingredients (makes more than 4 servings, but easy to make a big batch so you have some on hand):
3-4 tbsp Dijon mustard
¼ c. rice wine vinegar
¼ c. balsamic vinegar
1-2 tbsp. Hot sauce (I like Cholula Origianal or Tobasco), optional
1 c. olive oil
Pepper to taste

Dressing Instructions:
Whisk mustard, vinegars, hot sauce (if desired), and pepper together until well blended. Start to slowly drizzle olive oil into vinegar blend while whisking vigorously. Continue whisking while you add olive oil very slowly until all olive oil is combined in. This will bind the oil and vinegar so your dressing doesn’t separate. The more slowly you add the oil in the better!

2 tablespoons of dressing = 1 serving

Salad Instructions:
Put greens, almonds, and cherries into a salad bowl. Pour 8 tablespoons of dressing over salad and toss. Serve and enjoy!
